For the spoilers you have to 'ARM' them. In the case of the 738 you open the engine panel and find the speed brake, drag it down to about 1/4 of the way where it says ARM and when you land and start the reverse thrust, she will stop a little faster
Cant you press shift + / like in FS9? Or is FSX less advanced Also i believe, if its like FS9, there is an assignment to assign that can dump all the throttle which in theory should make it go into reverse thrust.
You cant have your cake and eat it... What the hells the point in having it then!!!

If the plane has cargo doors, press Ctrl + E + 2. It's a bit picky with the timing sometimes, but keep trying it, and you'll get it. Oftentimes, with third party manufacturers, the airplane designer will assign the cargo doors to the "Tailhook" or "Wing Fold" function, so make sure you have keystrokes assigned for those as well.
