I recently bought FSX Acceleration pack, not realizing that it cannot be installed if you already have SP2. My question is, if I uninstall FSX and reinstall in the correct order, will I have to re-install payware aircraft and scenery? I know the files stay in-tact, but I'm unsure about if everything will work correctly afterwards.

Yes, you will. The best way to install FSX is to install the game, Sp1, and then Acceleration which contains Sp2. You want to do this all with a clean install, no add-ons. After you've installed all that, go ahead and re-install your payware airplanes and scenery.
The only reason the A340 climbs is because of the curvature of the Earth.

I strongly recommend that you install everything from scratch, and verify acceleration to work perfect before you add any addon. I also recommend you defragment after each installation step, this will help a lot against future stuttering and may even help on frame rate.
