They're REX 2.0, standard def. clouds...HD ones drastically drop the performance on my system (laptop), but look even better. It's combined with ASE, which is great, because it adds more realistic feel to the environment (more accurate visibility).
For flights around Europe, which I fly most of the time (but always with different birds), it is wise to prepare the aircraft wisely because of facts you've mentioned. So 30% fuel in center tank and about 20-30% fuel in bigger wing tanks (speaking of 747). I leave other and aux tanks as they are (small enough), so all in all, I have enough fuel to cruise around Europe and have fun learning the plane and its systems. For serious flights it is cool to calculate as in real life, but on weekends I like to just fly and even if I carry a bit too much fuel it doesn't bother me really...
