I find myself thinking about this recently. So if you could have 6 PMDG/Level-D like FS9/FSX add on planes for your FS fleet what aircraft would they be? Lets keep it to similar cockpits/systems type thing. So 733-735 or A318-A321 etc..
Also what perfect payware scenery airports would you want? Lets make that 10 which you want. So 6 planes and 10 airports.
My list:
Planes:
777
737NG
747-200/300
Dash-8 100/200/300
A380
757/767
Airports:
MIA
JFK
DCA
SYD
HKG
LHR
BCN
LAX
EZE
DXB
"It was just four of us on the flight deck, trying to do our job" (Captain Al Haynes)
That's a tough one. But why did you post the 737NG and the 767 under aircraft? There's the Ifly 737NG and the Level-D 767. I admit, the 67 is not state of the art feature-wise (static FMC in the VC etc.) but apart from that it's still one of my absolute favorites to fly in the FS. And the Ifly is fantastic too.
Also in your airport list there's MIA (done by LatinVFR), JFK (FSDreamteam), DCA (Tropicalsim), HKG (Imaginesim), LHR (Aerosoft+UK2000), BCN (Simwings) and LAX (FSDreamteam) already available in great quality.
My list:
Aircraft
A32X
A330/340
B757
B777
CRJ
DC-10

My wishlist for FSX
Aircraft
1. Beechcraft King Air B200 - Very fond of this one recently taken FS9 out of retirement to toss Aeroworx's model in the air to get my King Air fix.
2. De Havilland Canada DHC-6 Twin Otter - Lots of fun in this one.
3. Dash 8-100/Q200/Q300/Q400 - Will be purchasing Majestic's Q400 upon release.
4. Fokker F27 - Could listen to the RR Dart's whine all day long
5. Embraer 170/175/190/195
6. Airbus A330-200/300
I'm also waiting for PMDG's Long Haul Boeing's (777 and FSX based 747) Once this gets delivered I'll use it to replace my existing PMDG 744 Port over although I haven't made a decision whether to take the twin or quad.
Scenery - using ORBX quality as a benchmark
1. Townsville, Australia
2. Darwin, Australia
3. Auckland, New Zealand
4. Port Moresby, Papua New Guinea
5. Denpasar, Indonesia
6. Adelaide, Australia
7. Perth, Australia
8. Broome, Australia
9. Sydney, Australia
10. Gold Coast, Australia

Hmm wishlist. Many of my previous wishes are being fulfilled as we speak but I'll list then anyway.
I'm on FSX these days so...

Updated 747 (PMDG again)
Dash-8-Q300/400 (PMDG possibly in the coming years)

A380 to PMDG standards (I know PMDG hinted at an Airbus in their talk at the recent Aerosoft convention I think it was).
A330/340 as above

DOH
NRT
SEA
ABZ

I am aware of all of that. I am just saying if my fleet could only have 6 well done aircraft those would be it etc.. And with the scenary I know there are a ton of great ones, but I am talking perfect dream add on airports like never seen before. Latin VFR MIA is good but not the best thing out there.

As far as airplanes go, I would pick:
Boeing 727
Boeing 737NG
Boeing 747-400/8i
Boeing 777-2/300
Boeing 757/767
in 6th place, it's a 3-way tie between a King Air/Q-400/ATR-72
Scenery:
ORD, SFO, LAX, LAS, DEN, MIA, MEX, LHR, FRA, SXM.
Pilots without aircraft mechanics are just pedestrians with sunglasses and a leather jacket.

Considering I have to choose 6 of any aircraft, disregarding what indeed is on the market,
Tu-154(M) (there I have FSX B-2 for the VC looks, and FS9 M for slightly better systems... but not in one package sadly)
B737CL (dont tell me Wilco...)
B737NG (base covered by PMDG)
DHC-8-Q400 (looking forward to Majestic)
Any member of 320-340 Airbus family, but preferably A320(+18/19/21) - I am not too big a fan, but would be nice to be able to try how a real airbus flies and operates. (looking forward to FSLab - Q3 2012)
and for the last one, one of the GA planes that are relatively common around and I like them - Z226 or 526 or maybe 326 (not 126, that is a good plane, but cruises too slow), Z-142 or 242 or maybe 43, or maybe even L-200.
(currently I have in GA category my two favorites A2A Cub and Aerosoft Katana)
airports... well... I am pretty flexible. But I would like to get done with KSC, and a new PRG (which is on the way), other than that I pretty much just go wherever I feel like, if there is scenery, if not, I just go elsewhere, so no big deal.

For aircraft I'd like a PMDG style Q400 for FS9. I couldn't give a hoot what's planned for FSX Q400 wise, my computer won't run it and I'm not in a position to go for an epic upgrade.
For airports I'm not that bothered really, I'm not really an eye candy junkie, the fun of the sim is the craft of flying, navigating, and landing. I'm ok with the sparse stock airports, I "fly" to fly the aeroplane.
One thing I would like to see is a repainting program for those of us who can't grasp the technical process and don't have the artistic eye needed. A utility program where you feed in your paintkit, cut and paste a logo or livery, press a button and hey presto instant texture file. I have a few liveries I'd like but can't find anyone who will do it, even for a fair price.

It's just getting to grips with the likes of Photoshop etc which aren't that difficult. The main issue is how expensive the programs are to buy.
I managed to get mine on a long term student license when I began my studies into Aeronautical Engineering. That cut around £800 from the RRP, which helped and I only really use it to create my own custom paints for the NGX at the moment.
It's just getting to grips with it.
I created a virtual airline in the UK that sits in my FSX only. I called it Swift after the small Spanish airline, and it gives me something to do when I'm bored. You'd be amazed how much fun can be had by setting myself a certain amount of aircraft, and juggling them around on routes can be. Gets the brain working I find.
I'm by no means an expert at paints, and I only do the basic stuff really for my own personal use. I don't attempt to tackle the real world stuff, as I leave that to the experts.
I first started painting FS aircraft about 2-3 years ago, and I haven't really been serious about it so it's taken some time to get to grips with things. But even now I can knock up an AI paint in about 10-15 minutes if it's easy enough.
Experimenting is the key I find, and don't be afraid to spend many an hour on the paint itself getting it right. I think I spent 4 hours painting up the NGX for the first time, getting to grips with all the "background" stuff that needs to be added to get the full effect. Luckily many paint kits are very forgiving in what they allow you to get away with, especially the NGX kits. All I will say is that you need to have a very good eye for precision unless you're not too fussed. I couldn't tell you the amount of times something has looked perfectly aligned to me when painting on a pattern for example, only for it to be way out in the sim.
What I'm trying to say is, you don't NEED to be artisitc to knock out some decent repaints. I'm mediocre at best and if I can knock out this piece of crap for the NGX....
Then anyone can do it.
But anything can look good to anyone. The tail logo is a weird thistle design, because I'm mostly Scottish in heritage. You can find inspiration everywhere.
Oh and the other thing is, especially with painting programs. Look for and find new brushes all the time, as you'd be amazed at what you can find.
Trust me, just practice when you get time and you'll not have a problem

I will name those which aren't available on the market yet, or if available, is not up to standard or to my taste.
B777 all variants - PMDG coming out with 1 soon thankfully!
A380 - Wilco one isn't good
Airbus A330/A340 family - Wilco one is ok but not up to standard
That's all I can name for now. It seems like the other aircraft I want (from Airbus/Boeing) already have great addons available.
Airports
SWA (Jieyang Chaoshan Airport, my hometown airport)
CAN
