DC-10 is right, just take the aircraft above 30kft and the engine contrails will appear.
Some aircraft also have vapour trails built into their code so that in low level flight you get some lovely thin vapour trails off the wingtips. 4 aircraft with this feature spring immediately to mind:
DSB Designs BAe Systems Hawk Mk3
Lago Panavia Tornado
I3D Boeing B1-B
MelJet Boeing 777
I'm sure there are plenty of others but since I'm at work those are the only ones that I can remember.

Hi Spotterboy, just a hind, go to flightsim.com and try to find jettrail.zip and download it.
I did it a few weeks ago and it is an amazing new file who completely changes your jettrails from
the boring standard ones!!! They are much more realistic and stays longer in the sky and when
using real weather (I'm using FS Meteo) than you can even see that they deviate in the wind
direction and deform when turbulences are present!!! You will also see other aircrafts jettrails in the
sky when flying, believe me it is amazing and unbelievable how a little file can change the realism
of flying in FS!!!

Dragon-wings, Contrails will work on all Boeing aircraft above 30,000ft but I'm not sure if it'll work on the Learjet 45 as the model hasn't changed from FS2000. Contrails will not work on all prop aircraft, Hope that helps .

in the forum!!! But I can answer your 2nd question with Yes, it works on all the other aircrafts (jets, for the props I donno) for so far as I could see. It works well even when using 3rd part aircrafts as AI traffic. I'm remember, I flew yesterday from Kandahar to Tehran with my RAF VC10 and I was at around fl 360 and a few minutes before starting my descend I encountered over Iran an Iran air Airbus A310 and one A330 they where also descending for Tehran airport (Meharabat) but where still above fl 300 so I could cleary see the amazing jettrails of the aircrafts and how they stay in the air for a long time ! Very nice to see

Just to make it clear: The contrails will appear on all aircraft no matter what version of FS it was developed for. Some addon aircrafts also have built-in vortices and the likes.

On some aircraft, if you press the letter 'I' the contrails will appear even if you're below FL300.
