It seems each take off I do, my plane seems to veer to the side slowly and then off the runway. My rudder is tied to my taxiing (nosewheel) and it is NOT on autorudder. The rudder is controlled by my twisting joystick's twist which I use to rudder inflight and taxi. HOw do I keep the plane straight on the runway. I always push 5 on the keypad with the NumLock off to center the nosewheel but it still happens. Power is always equal in both engines and I usually use T.O/G.A. with the autothrottle. Could it be my autopilot settings? I never have the autopilot on except for the Autothrottles.
Then second issue is on rotation/nose up my plane seems to bank. I try to keep the joystick centered but it is hard since it does not snap back to dead center after I let go. Would the Wing leveler or Yaw Damper work on takeoff?

JAGflyer, with taildraggers like the Dakota, you have to free up the tailwheel to taxi, sometimes it helps to lock it for take off. The buttons for that are 'Ctrl-G' or 'Shift-G' (I can't remember which off-hand, check the Kneeboard for the key commands for the aeroplane you're using). Maybe one of those does the same for the nosewheel.
I don't expect so, though, because in real life, with tricycle undercarts, it is normal and necessary to steer with the nosewheel at the beginning of the takeoff run, until the speed builds up, the rudder 'bites', and you can rotate the nosewheel off the ground.
In any case, as Flymia says, in any kind of wind you will need to be able to hold the aeroplane straight.
I'm guessing at how much 'flying' you've done, apologies in advance if you're an old hand. But, assuming that you are fairly new to FS, I suspect that the problem is that you are gripping the joystick too hard - and either inducing the gradual turns you mention, or over-correcting when they do happen.
Try the lightest possible grip, and apply only the very lightest of pressure to correct any swings. Take your time, no hasty movements, give the aeroplane plenty of time to react before you press harder. And keep your eyes on the far end of the runway as much as you can, don't just stare at the white line.
If you're using TOGA you're obviously flying the airliners - another idea that might help is to practice with a lighter, slower aeroplane like the Cessna until you've got the hang of things.

Check that your joystick is correctly calibrated, it may be that when it is centred the computer things it is banking to one side. Go to Start > Settings > Control Panel > Game Controllers and if necessary re-calibrate the stick. This might be the problem.

I have the same problem. I was guessing it was a problem with my joystick configuration (it probably is). I have calibrated it, reset all settings to default, and tried everything in the book I know, still every time I start a flight on the ground my rudder is on fully to the right, and I have to move it from side to side a few times to loosen it up like they do in real life...no idea why!

Also - check that you don't have your autopilot on with a heading entered when you are on the ground - I have done that on a couple of occasions - doh!!

The AP is never on as in pushed so the light is green. I set my speed,heading,alt and climb but they are not pushed or activated. As soon as I am off the ground I hit SPD and TOGA clicks off and my speed starts going up to about 230 for climb adn I slowly increase it until I can go MCH and set my speed that way.
Yes, I am not an old top at FS. I have only been using it for 6-7 months. I do over react when trying to do visual approches. I find i never make the runway. Im trying to practice though.

You may accidentally "steer" with the ailerons because you're holding the joystick a certain way or put pressure on it. That's happened to me a few times.
