How do you takeoff with a glider on FS 2004? All I can do is fly up to high altitude with a jet or propeller aircraft and then pause and change to a glider. Is that the only way possible?

Yes that is the only way possible since Gliders dont have engines. That is how they do it in real life. They get a tug plane and than get drop off in the air and fly by them selves

MS recommend slewing actually. Load the glider at the airfield you want to fly at, hit the Y key and then use the joystick to move around, the trim buttons will take you up or down. When you are in the position you want, press Y again and you'll be back to normal flying.
Once you have tasted flight, you will walk the earth with your eyes turned forever skyward

That is the only way that i can think of. But to save the flight, save it at the point that you change to a glider. They you dont have to keep taking off again and again. I do this when I practise my manual landingd, save a lot of time.
