I wouldn't bother with 64-bit chips just yet. Wouldn't want to risk any hardware incompatibilities. Plus, I think there's much cheaper and better ways of improving simulator performance.
If I were you, I'd take a look at some of the graphics cards on offer. I've heard the Radeon 9600 is pretty great. Also, if you have the physical space for it, consider getting another GB of memory. When it comes to simming, you need all the RAM you can get.
