Does anybody use STARS and SIDS for flights in FS?

Absolutely...most times I'm flying one of my add-ons that has an FMS with the DPs and STARs already loaded, but when I'm not I like to pull my approach plates out of the flight bag and fly them manually. Obviously, the FS flight plans don't use DPs, but I do my best to use them when possible...
