I changed my camera setup to pick the center focus point, not "auto". But I am getting some shots where part of the plane is sharp and others are not!
For example, winglets come out a little blurry or else the tail is blurry and the rest is not.

I'm also using Av mode and stop down to around 9.0 to get it in that middle range "sweet spot".

What's causing the winglets to be a blur and the rest of the plane sharp? I think for the most part I try to focus dead on in the center of the plane where there is good contrast.

Depth of field, I used to have the same problem until I started using a higher f number, in general, if I set the aperture below f8 on my 70-210mm lens I get a part of the aircraft that is sharp and the rest relatively blurry. Sometimes I can get away with sharp pictures at f5.6, but it's rare. This may vary from camera to camera, but for me anything at or above f8 has turned out just great.

Try a higher f number and see how it goes.
