I understand, for shots of aircraft lining up or touching down on runways 28L/R taken from the waterfront, 400mm is the minimum to get full frame shots

Question is, would 300mm with the D60 be enough to get ok - decent images of aircraft? So that aircraft registration could be read?

For larger planes - yes.
Beware of heat haze.
