Your link is for the 50-500mm, I have a 170-500mm Sigma and it a good lens for the money. It's a little soft wide open so you'd have to close it down a bit. I haven't used mine since I got my Canon 100-400L though.
Chris Muir shoots with a 50-500mm Sigma mounted on a Canon 300D and gets fantastic results out of it.

I doubt the converter + 75-300 would work out well. Not only would you loose autofocus, and be stuck with a minimum aperature of something like F11, but the 75-300 is not a "professional" lens and any imperfections would become magnified. Many Canon L lenses can't even handle the 2x converter -- the 100-400 for example.
Get a 170-500. I've used one for a while now and think it's an awesome lens. It'd be perfect if it had USM, IS, and a bit wider minimum aperature... but as is, it produces excellent results. Check out Rez Manzoori's stuff if you need an example:
