As far as spotting around IAH. If you love CO then IAH is the place for you. LOL! Most traffic is CO, but we do get our share of other airlines. Check out http://www.flytecomm.com/cgi-bin/trackflight and type in IAH to see what the usual daily traffic looks like.
Most times spotting around IAH is hassle free from Law Enforcement. The key at IAH is to call HPD (Houston Police Department) and HAS (Houston Airport System) and let them know where you will be spotting at.
Spotting from any of the 5 terminal parking garages (A-E) is usually ok as well as from the Lee Rd location (which you can catch any A/C landing on runway 27). Generally if you phone in with HPD and HAS while spotting at those locations you should not be bothered. There are other spots around IAH, but you are often (but not always) told to leave by law enforcement.
As far as which is better.. I have never spotted at DTW before.

I spot at DTW all the time. It's a wonderful airport, just so long as you don't really need to see any runways. :-/ There are plenty of surface roads outside the airport property that give unobstructed views of approaching flights miles out. Think big open fields.
The local cops seem to be pretty friendly. I've been approached once, but generally they wave and keep going. I've recently found another site that's about 500 yards from the end of the runway on a hill so you can see over the trees. Planes obviously cross your path very low.
As for runway and ramp shots, the only game in town seems to be the McNamara deck, which only gives you a view of the 3/21's. (The 4/22s are blocked from view by the terminals.)

The funny thing is, that I called Delta to check availability on flights from DC area to DTW and to IAH. (I want to use my SkyMiles).
The operator has told me that they don't have free seats on flights from DC to DTW (on NW), but I could fly Delta Connection via CVG.
Then I asked for exactly the same date but flight from DC area to IAH on CO or NW. She gave me this itenarary IAD-DTW-IAH, coming back IAH-DTW-IAD.
If I take it I'll be flying in the cargo hold on IAD-DTW flight because they don't have empty seats.
As this is same day return trip, it was very stupid of her to ask me if I need hotel at IAH!!! Well, outsorcing jobs to India can be fun
Thanks guys again, I'll let you know here next week which city will be my next destination.

Yes I can, but she said that they don't have space on direct CO flights. My only option for IAH is to fly on NW via DTW - arriving at IAD at 11am and leaving at 4pm (which is not enough time for me), or flying Delta via CVG and arriving at IAH around 10:30am and departing back to IAD at 4:30pm.
Right now I'm shooting for May 6 or April 29.

What if you flew out of BWI? I don't know if that's remotely possible, or if you are a morning person or not, but I know you can get on CO527 which leaves at 6am and gets into IAH around 8:30am. Then you can catch 426 (4pm) or 526 (7pm) back to BWI. If you can manage to get forth and back to BWI, this schedule would give you a very full day at IAH.
On a personal note, I spent many months leaving the Inner Harbor of Baltimore for BWI around 5am to catch 527 back home!
