does anybody know if there are good spotting opportunities at

Incheon
Gimpo
Jeju
Busan

???

Country is technical is still at war, so aviation photography is being frowned upon, but not impossible.
If told to stop by any authority, it's wise to obey.
Jeju and Busan are civil/military airfields, so security will be much higher.

As for spots, I have no idea other than through the windows in the terminal.

Kimpo used to have a roof terrace 6 years ago when I was there, not sure if it's still open. When I was there, taking pictures for an hour or two, another visitor pointed out to me that photography was not permitted. I can't read Korean, so how was I supposed to know? I didn't see a sign. But I didn't get into any trouble though. The outside part of the terrace was empty most of the time.
But you might want to contact a Korean photographer via the 'contact' button with the photos for more useful info.

Passed through Busan twice in March this year. It is a military base as well as an airport. Based stuff was all C130's and Casa 295's. Lots of interesting HL- choppers lying around, including a few Police Kamovs.

There were numerous signs all around the departure lounges saying no photography, and was also told this onboard the Korean A/L B739 before landing and again before departure that no photography was permitted.

Needless to say my camera remained packed away!

Never had much opportunity to take any shots at Seoul (Incheon) but have read that it's best to be discreet

Jeju - both times I was there it was too early in the morning for photos.
The airport is very small and anything civil there may only be only be viewable / photographable from inside the small terminal or very close to it, no recollection of any good viewing sites there. The military side was too far away from here to identify anything other than the aircraft type and many aircraft were hull down behind sloping ground.

Kimpo - In theory a wonderful compact location for photography, compared to sprawling Incheon, but while a considerable number of Korean schoolgirls were using cameraphones to take photos from behind the glass near the gate, anything more organised or any sophisticated photography is likely to bring the security presence down on you mighty fast.
