If it's westely winds, then the runway used will be 27. The scheduled runway for departure is 27R Saturday mornng. If you don't want to take photos for the site, then I suggest you park up in the visitor's centre (poorly named) which is next to the Rennaissance Hotel, outside the Heathrow academy. You will get a good view of the departing aircraft starting their take off roll.
If it's easterly winds, then I suggest you park in Hatton Cross car park, from where the departures will pass over your head.
As for the terminals, I'm afraid that's a no-no as there are only views from airside within T3
