Hi all,
I'd like to pay a visit to PMI for a photography trip at some point but all the spotting guides I've read are designed for those with a car but I don't drive, unfortunately. Is it possible to walk or get public transport from the terminal to the south side of the airport? Are there any decent hotels in this area that people would recommend?

I can't help you with the proper spots around PMI but if you have a lens bigger than 300mm you may be able to get some shots from Can Pastilla seafront. I believe there is a cafe around there where some spotters go, a quick seach should confirm.
As for hotel, When I went in April for a family break we stayed in the Hotel Leo in Can Pastilla, from here you could see some of the Biz jet/ cargo apron and some of Rwy 24L. From your position at the hotel you can see reg's from the apron at 300mm and zommed on camera but as for the runway, I wasnt able to any reg's just type and airline. This was with a 300mm lens so if you have a longer one you may get more luck.

To be honest it will be difficult but by no means impossible with a bit of swift footwork! If they are on the 06s it'll be a lot easier for you but even if they are on 24 there's still hope. Email a chap named Javier Rodriguez (you'll find him by searching here), who knows all the spots - there's one in particular that I'm unfamiliar with, on the south side, which looks as though it could be but a brisk walk from the terminals.

I've been two times to beautiful (and crazy) Mallorca in the summer and on both ocasions I went to the airport a few times. Let me say that with a car (or a scooter or even a bike) in PMI is really easy to make photos.
If you're planning to walk then let me say that it can be done more or less easily if the 06L is in use for arrivals, but only if you're staying in Can Pastilla area.
Here is a self plug, but I'm sure it will help
The beach on the photo is Can Pastilla and the marina is also easy to spot. If you're walking then follow the coast line until you find a small street named Calle del Dentol (easy to see on google earth). From there you can easily make photos with good light in the morning only of aircrafts about to land on the 06L. You can even get closer from the aircrafts landing as there is a foot path there following the coast line and I would say that 300mm are enough from there.

However the runways are used in the 24 direction more than 06, in my experience. For a non-driver, hiring a bicycle is probably the best bet to reach the good spots, if you are prpepared to cycle a couple of miles in the generally hot weather.
