I am planning a trip to Amsterdam. I found a lot of information and quite a few good guides. I will be there with my car, so with the information I have now finding these spots should not be a problem.
I am especially keen on the following aircrafts:
Eva Air 773
I might be wrong but from looking at the database or flightradar I have the impression that (of course depending on the wind) they tend to land on specific runways:
For example Kenya Airways mostly seem to land on runway 27 "Buitenvelderbaan", whereas with the Surinam I might stand a good chance on the "Polderbaan".
So is there any pattern that aircraft coming form certain directions tend to follow or how runways are used? I know that there are always exceptions to the rules. But perhaps I can get some useful advice.

When runways 18R, Polderbaan, and 27 or (more commonly) 18C, Zwanenburgbaan, are in use for landings, the most westerly runway, ie 18R, usually gets the traffic from the west (UK/Atlantic) and the other runway the flights from the east. As you say, there are many exceptions, and I'm not sure what the Kenya Aw routing and thus the more likely runway is.
It's similar when 06 and 36R are in use for landing, and when two runways are in use for departures.
I = inbound peak, two landing runways, one departure runway
O = outbound peak, two departure runways, one landing runway
0700 – 0920 LT - I
0920 – 1040 LT - O
1040 – 1140 LT - I
1140 – 1240 LT - O
1240 – 1400 LT - I
1400 – 1500 LT - O
1500 – 1600 LT - I
1600 – 1820 LT - O
1820 – 2000 LT - I
2000 – 2200 LT - O
As a rule, the aircraft you want will arrive/depart just around the time of a change

I already guessed that there were certain times when they use 2 runways for startings / landings / but I did not know that they were fixed. Do these times change, like for example with the winter timetable in use or are the relatively fix?

The Kenya AW routing comes from the east, that is probaly why they used the 27 when I followed their flights.
From what I saw there is a good spot for 27 landings too. In order to get there do I need to park my car at the McD spot and walk to the other side of the runway?
And yeah unfortunately there is an exception to every rule. I just wanted to know where I have the best chance to get the planes I am looking forward to and to understand the runway system, which is not as obvious as with other airports.
The terrace is before the customs / security, that means for you on the other side but easily to get there when you have arrived and got through the customs.
That's perfect, thanks! I'll be arriving on KLM from ORD and flying back a week later, but when I arrive I'll be hoping on the train to Brussels so I was hoping I'd be able to stop by for a least a few minutes coming and going.
