I will be flying LH via EWR and FRA and I was wondering if there were any good places to go to to check out A380s and take photos of other interesting areas. Any good places to check out the runways? Also, can you give me any tips about these airports.

I don't think the A380 is allowed to fly into EWR, due to its size.
As is being discussed on another current thread, it is very difficult to take phtographs around EWR without raising the ire of local authorities. Not sure whether it is also frowned upon within the terminal, but if it were me, I would just take pictures and not worry about it. If I paid a lot of money to be able to air travel, I should be able to take as many photographs as I want. This is America, after all

There is only a visitor's terrace on Terminal 2 in Frankfurt anymore and no, transit passenger don't have access to it.
It is accessible from the check in area outside of the passport control (like it is with all other airports I guess as they want to make it available for the general public).
It is not the best place to take pictures of LH Aircraft, as they are on Terminal 1. LH widebodies will only occasionally taxi by and you can see some narrowbodies on the apron.
The place in itself is not bad but you will shoot against the sund during daytime and it closes at 18:00, before the light gets better.
After all it is only open from April to October (and sometimes in November).
The information mentioned above seems to be very old when the terrace on terminal 1 was still open, it closed in the early 2000's.
In the transit area you could only see airplanes through some windows.
For better views either go to Terminal 2 or leave the Terminal direction runways.

It depends on where you are. In the international area of Terminal B, it's likely you'd be fine, and I've never been approached in Terminal C.
In the Delta area of terminal B, the Delta gate agents are extremely hostile to photographers, despite the fact that photography does not violate any statute or any posted rules and regulations. I don't even take the camera out in this area anymore owing to the outward, public, and overwhelming hostility of the DL employees who work there.
I'm amazed that you can be treated so badly by DL employees at the gate in EWR, board a DL plane at that gate to AMS, and then go photograph planes from an outdoor observation deck. The experiences in that terminal have greatly colored my opinion of that airline.
If you are in the NYC area, you are much better off heading for LGA or JFK.
