I am planning a trip to the viewing park at MAN, but I will be travelling by train to the airport station. Is there a bus that stops at the viewing park that I can catch from the station, or would it be quicker to just get a taxi?

Yes, there is a bus to the park that leaves from the airport train station. Its an hourly bus service which leaves the station at like 10 past the hour every hour (I think it starts from 9am). It would be quicker to get a taxi, though it will cost quite a bit more...
If you go early, you can spot at the T1 car park which overlooks the ramp at T2 and the cargo ramp in the distance:

You can actually walk it in about 30mins. I was car-less a few weeks back for a few days so I had to get a bus to the airport and walk everywhere!
The buses are, as stated above, roughly once an hour but the last one back is way before the park closes, so best to take some exercise and walk back to the terminals to take advantage of the late light.
By the way, the light for photography isn't good at the viewing park until at least 1630 this time of year. The T1 car-park is, as suggested, better in the morning.
