What is the best film to use for take-offs right at rotate w/ a 300mm lense?

Use the slowest possible for the amount of light you have.

I would use either ASA100 or 200.

As a rule of thumb, I won't take a picture of a moving plane unless I can have 1/250 shutter speed and at least an F11 (my camera does not have autofocus :-)).

I'd stay away from 200 speed film. I second Fuji provia 100. I think it has superior quality to that of kodak's ektachrome. Be careful though, the exposure latitude with slide film is greatly reduced. Being off just one-half stop can make a noticeable difference in a picture, as opposed to negatives, which allow you to be off by a whole stop and still produce an acceptable image.
