Corfu is an excellent choice! There is a hotel that has a view to the airport but I dunno the name, maybe some other spotters can help you on that. Rhodes gets a lot of charters too and I am planning to visit Rhodes this summer too for spotting. Heraklion in Crete has good traffic too but I think that you will be chased away if you try there because the airport is also a military base (or is this Chania??).

There are several hotels under / very close to the usual approach at Rhodes and the runway is also very close to a beach for landing shots.
The beach stretch there is undeveloped, and caution should be used, not only for heat stroke and dehydration if you stand out there for a long time, but also for the very negative Greek attitude to aerospotters, especially of military aircraft.
Many of the european charters to Rhodes also arrive and depart in the hours of darkness. German carriers are depressingly common.
