What matters to you in an airline? The aircraft type, IFE, seat pitch, fare, frequent flyer rewards? Where would you like to connect? I have never flown into Dublin, but these are some of the considerations you'll probably want to take when picking what airline you want to fly.

If in business class EI offers the best product from USA gateways direct to Dublin but very poor IFE, if that is important to you.
If in economy, then the difference is marginal, the EI economy product is in rapid decline and may now be worse than the US majors. Possibly the best of the US carriers in economy on the Atlantic is CO, but their connection out of EWR may not be ideal for you. DL via ATL might be easiest.
I would strongly recommend not connecting to DUB via LHR unless there is a huge price advantage on offer. It is a great deal of hassle even in good times.

I am actually visiting Dublin California right now. It's about 30 miles from SFO. I am not sure if they have an airport.
My best guess would be to fly Air Lingus. Get a taste of Ireland at 35,000 feet.

I have flown EI, CO, DL and AA out of DUB and I would go with DL or EI. I wasnt wild on CO and dont like flying 757s transatlantic. AA's 763 was not great either, not nearly as good as their 777 service. EI are still a good airline transatlantic but I must admit their IFE is not great (but no worse than any other airline out of DUB)
Next Flights: EI DUB-LHR A320, BA LHR-SFO B744, UA SFO-LAS A320, BA LAS-LHR B744, EI LHR-DUB A320
Will you be going beetween May and OCT? If so try US IAH-PHL-DUB. No SNN stopover like DL and EI(they have a seperate PHL-SNN flight). However try to get a mainline flight from IAH ans the transit from Terminal F to A-west can be hell so if so try to leave atleast 90 minuits connecting time. This service is operated with 762ER equptment so no AVOD like the A330's that US has. otherwise CO is good as well.
