This summer I'll be travelling on a NYC-TLV-HKG-NYC itinerary. I'm in the process of choosing airlines for the trip right now, and the choices are down to BA, AF, LX, and LH. Which of these would you recommend that I choose for the trip? Keep in mind I'm flying in and out of Israel on a Saturday, so LY won't be an option.

Economy, i suppose... In that case LH... reliable service, big fleet, good route network, less delays, all in all solid perfomance, and no unpleasent surprized, in most cases (at least that been my experience)

BA is a great airline IMO. LX is, too. Good food, and a good economy product.

I would choose LH too. I have the best experience with them..
and I would definately avoid AF: 3 out of 4 times the baggage was missing (one time for 3 weeks...), and one time we got a delay of 7 hours, than the flight got canceled at all, the replacement flight took of the next morning but 45min after take off we got cabin pressure problems and had to return back to ORY after dumping fuel.. so there was no chance we could make it to Martinique in time and got of the plane...
And on top of it, we got no compensation at all from AF..
The only positive thing was to get some great pictures..

I am trying to avoid having to connect in either LHR (when having to change terminals) and CDG T2, which rules out BA and AF.
Between LX and LH it is a close tie and I would select based on timings and costs; actually you could combine both carriers using a LH-ticket.
Flying out of JFK to TLV, a connection in ZRH might become a bit tight if your flight is delayed; safer timings are available via FRA.
For a flight from TLV via ZRH or FRA/MUC to HKG, I would keep a) the timings and b) the sector length in mind:
HKG-ZRH in a A343 is 1 hour longer (and a night flight) than HKG-FRA in a B744 (LH739 is a daylight flight) ...
Other question:
Do you need to return from HKG to JFK via Europe ? Have you considered to make that a Round the World trip ?
On StarAlliance HKG - NYC: AC via YYZ or UA via ORD - or any other routing via Japan or similar ...

How would you get from TLV to HKG with LH or LX? I didn't there were flights that did that, unless you were planning to do something like ZRH-TLV-ZRH-HGK, which I assume is what you mean.
I'd recommend doing JFK-ZRH on LX17 (arrives ZRH at 8:20). Then ZRH-TLV on LX254 (departs ZRH at 9:45). One hour and 20 minutes should be enough time to connect in ZRH, seeing as you won't have to collect your bags or anything.
Then, if you're itinerary is what I assume it is going to be, I'd do TLV-ZRH on LX255 (arrives ZRH 19:15). Then ZRH-HGK on LX138 (departs ZRH at 22:40). Again, plenty of time for connection, and even some time at the observation deck.
Then you need to decide if you want to return west-bound back through ZRH, or if you want to fly east-bound through LAX, SFO, YYC, or ORD with another Star Alliance carrier. You'll have various options.

Interesting question here: Would such a routing (part) be allowed in Star Alliance's Round the World fare ? Officially, TLV is in Asia and backtracking is only allowed within a continent ...
