You have two options:
Delta via ATL and Continental (EWR-GRU and then connect with the last leg of CO's IAH-GRU-GIG).
Just remembering that DL flies ATL-GIG with the 763 and CO flies EWR-GRU with the 762 and IAH-GRU-GIG with the 764.
As for seat pitch and inflight service I cannot help you but there are some pictures of the cabins at airliners:

I think you will be pleased with both. However, DL economy service trumps CO service, IMO. But CO has PTV's, so that trumps DL. I think it should be a matter of schedule and price. If you fly DL in F/C, you can fly out of LGA to ATL and receive a meal is it's at meal time, and have access to the lounges in ATL.
DL's new C class is stellar compared to the old by the way, and if that is guaranteed that you will get that, I'd go with DL no doubt.
The proper term is "on final" not "on finals" bud...

Leaving aside the new DL 763 business class seating, if it was a choice between the current CO and DL business class products on 767s, I would choose CO. Their 5-abreast (2-1-2) configuration is much more spacious than DL's 6-abreast (2-2-2).

I also live in New York and fly very often to GIG.
It depends on your focus, but as also a SkyTeam member i like to arrive early so, my option is always to take the 4 PM or 4:59 PM LGA-ATL and fly non-stop ATL-GIG. It's faster and convenient as usually arrives before 7 AM.

The new lie flat seats aren't. But there is a refreshment on the old B/E cabin that makes it so much brighter and better. Footrests are noticibly raised a little. Extra padding is added. The main difference though is the AVOD. The old IFE pales in comparison to the new AVOD.

I have to trips booked on ATL-GIG, one for July, another for December, and probably more to come.. do you know when the new lie flat will be used on ATL-GIG ships ?

Yeah, 763's will be the last ones to get them. With that said, Delta is still refreshing them, and you should get the 'refreshed' product.

Thanks !
