If you want to fly non-stop SYD-DXB, I think EK are the only ones. Great airline (I'm travelling MEL-DXB non-stop next week with EK). If you want something different, you could instead go to EY direct to AUH, then car/bus to Dubai.

if you have a preference for daylight flights, SQ, CX and TG offer good options, and fares would be pretty competitive.

Only operates thurs & sun, they also have other flights via BNE and MAA
CX has two flights a day via HKG (CX110/731 & CX100/745), some days 3 flights (the addition of CX138 connecting to 751 or 745), also have the option of connecting off VS201 or QF187 at HKG or QF1 connecting to CX751 at BKK.

I'm by no means playing favourites.
Simply put, that's how the flights came up when I put them in for shortest flight time SYD/DXB.
CX is a great airline, but travel time is about 19 hours.
