I'm flying LH ARN-FRA-ORD-FRA-ARN this winter on their A321/A333. What can I expect of them in terms of service, especially on the long-haul flight. Pillows and blankets, amenity kits, self-service snacks? Any info would be appreciated.

There will be no personal IFE. If you want some, bring your own and enough battery capacity.
A321 ARN-FRA: Expect a drink and a snack (depending on time of the day).
A333 FRA-ORD: Pillow and blanket: , but I can't say more as I haven't flown them in Y longhaul for a while.
In any case it might be a good option to bring along a bottle of water onto the plane.
If you don't want to buy it past security check, bring along a empty bottle (this will pass through security; just let it unscrewed and put it well visible through the X-ray machine) and fill up with tap-water past security.
Furthermore, I prefer to bring along something to eat shoud it turn out that the food offered is a) not enogh and/or b) does not suit my taste. Just make sure, that you will have consumed all sandwiches etc. before deplaning at ORD due to the import restrictions for many types of foodstuff (this restriction usually does not apply to commercially produced candy bars like Snickers, Twix, etc.). The USDA is more focussed on meat products, vegetables and living plants.

On LH short haul flights you can expect a quick drink and snack service but no IFE.
On the long haul Y flights you get pillows and blankets. You also have cabin-wide IFE but no personal TVs. As for food and drinks they probably have 2 meal/snack services on the FRA-ORD flights and frequent drink runs. I flew MUC-DEN earlier this year and certainly could not complain about the service. Alcohol (beer, wine, ...) is free on all LH flights. As for the quality of the food, I found it to be ok. If you are a gourmet better bring your own food.
As for amenity kits I was not offered any kit on my long haul flight in Y.
One final note: depending on your height the seat pitch can be quite tight. I am 172 cm and found it to be adequate but the guy behind me was taller and had a more miserable experience.

I flew YYZ-FRA this summer on LH A346 in Y and they served a dinner which tasted very good. And for breakfast do not expect to much, LH calls it "snack" it was one small sandwich, a yoghurt and a candy bar.

The 1st 346 is flying with personal IFE in Y class already... dont know the registration, but its airborne
