You might bring a visit to the Dutch Aviation Theme Park Aviodrome.
You can book Cessna flights for little money or something special like a Catalina flight including a water landing(recommended).
Although at this moment the Cat is grounded with a little technical problem I am sure it will be airborne again sometime soon.
At Lelystad there are also numerous little companies with Cessna's and other small A/C for hire.

You could fly the worlds shortest commercial air route, from Westray to Papa westray? See www.loganair.co.uk or Aer Lingus from Dublin to Shannon on an A330.
I would definately make a point of seeing the Concorde whilst your in Europe also.
