I will be connecting through LAS on Dec. 26th(friday) from an AA flight arriving at 12:10PM from DFW(connecting from BOS) to a United flight to PSP departing at 2:45PM. Is it worth $110 to change my AA flight and book directly to PSP(thus canceling my UA flight) or should I just risk going through LAS on a friday with the runway delays?

I wouldn't worry too much about it, if your DFW-LAS flight is delayed your LAS-PSP leg will be likely delayed as well since it would be either coming from PSP or FAT shortly before it left for PSP. 2.5 hours allows a decent cushion as well.

Fridays and Sundays are going to be the worst days for delays due to the 25L/7R construction. That's when there is increased biz jet operations that cause too large of a spike in demand. But, like Iowaman said, ATC delays affect all flights, and flights that orginate close to LAS are going to take longer delays than flights originating from a center not bordering ZLA. And, it's helpful to you that both AA and UA utilize the lovely D gate terminal at McCarran, so there is no need to mess with TSA. There's not too much extra risk here above the normal risk that comes with interairline itineraries.

Is there a new check-in for the second leg required (not at the gate) ?
Will you check luggage, that needs to be re-checked ?
If so, a nonstop to PSP might be the better (and safer / more convenient) option ...

Forgot about that part. I hope you are not checking luggage, because you may not have enough time to change over if you do. It's a long way back to central check in and baggage, plus the notoriously long lines at C/D security. As for check in, if you don't have luggage, I'm sure UA will just let you check in at the gate, the computers are certainly capable of doing that, so there's no need to go through security. And I wouldn't expect AA or UA to do any favors for you on the other's flights.
