I have a flight leaving from MIA , American Airlines departing at 6:25pm, but I would like to get to the airport at around 10am, drop off my bags and take the shuttle to Dolphin Mall and do some last minute shopping before returning to MIA for my flight to GYE at maybe around 4pm, Is it possible for me to check in that early and get rid of my luggage?

I'm pretty sure you can... For domestic flights you can check in (even online) up to 24 hours in advance.
