Of the airliners currently in service (barring the Soviet dinosaurs) that I've never been aboard, I include on that list: A330, A340, MD-11, 764, and A318.

Technically, this is really hard to do, because there are still some old, old workhorses still in "service" (like the 737-200, 727s, 707s, etc).
But of the "Modern" aircraft still in service, I've never been on:
Boeing 737-600/900
Boeing 777 (any variant)
Airbus A310
Airbus A318
Airbus A340-500
Airbus A380
DeHavilland Dash 8 (any variant)
Embraer 135/145 (any variant)
Embraer EMB-175/190 (any variant)
CRJ-200 (any variant)
I'm sure there's more.

MD-11 - my scheduled flight CPH-LHR on RG's MD-11 3 years ago was cancelled and SK put me on an MD-90 to BHX (so I still got a new type!)
