Technically, this is really hard to do, because there are still some old, old workhorses still in "service" (like the 737-200, 727s, 707s, etc).
But of the "Modern" aircraft still in service, I've never been on:
Boeing 777 (any variant)
DeHavilland Dash 8 (any variant)
Embraer 135/145 (any variant)
Embraer EMB-175/190 (any variant)
CRJ-200 (any variant)
I'm sure there's more.

There are quite a few aircraft i have't flown but here is a list of aircraft i would like to fly but haven't:
- A330 - 200 / 300
- A340 - 200 / 300 / 500 / 600
- B757 - 200WL
- B777 - 200 / 300ER / LR
- Dash 8
- 170 / 175 / 190 / 195
- 70 / 100
- MD-80 (again as i was too young to remember)

I think that's it. There are some others like Tristars, Tridents, 707s and VC-10s that don't really qualify.
After Monday and Tuesday even the calendar says WTF...
