Technically, this is really hard to do, because there are still some old, old workhorses still in "service" (like the 737-200, 727s, 707s, etc).
But of the "Modern" aircraft still in service, I've never been on:
Boeing 777 (any variant)
DeHavilland Dash 8 (any variant)
Embraer 135/145 (any variant)
Embraer EMB-175/190 (any variant)
CRJ-200 (any variant)
I'm sure there's more.

A300 (all variants)
A330 (all variants)
A340 (all variants)
B747 (all variants)
B757 (all variants)
B777 (all variants)
F100 (though that's about to change )
So the list of planes flown would have been shorter :
A313, 319, 320, 321
B733, 734, 736, 73G, 738
MD-81, 83, 87
WARNING! The post above should be taken with a grain of salt! Furthermore, it may be slightly biased towards A.

But they are the best ones of all
Hopefully I'll cross a few more off my list this year, basically it's anything I haven't already flown on yet, but here's a list:
An148 - (I think it's with the first airline now)
I don't want much...

Basically an adaptation of Dan's list - thanks for the template!
BAC One Eleven
DC-9-20 (are there any still in service?)

That is the list of all airplanes that I took:
A320, A321, A330-200, B737-800, B767-300, B777-200ER, B777-300ER, B747-400, BAe146, BAe Avro RJ 85.
Therefore I've never flown all the rest
