Both flights today (ORD-CVG and CVG-MSP) were completely full on CRJ-100s.
Yesterday was different; MSP-CVG was booked to 29/50, and CVG-ORD was maybe 60% full (First even went out with empty seats). However, my original MSP-SLC flight was oversold, and I did volunteer to be bumped off that one.
Last weekend, I did MSP-MEM-FLL-CVG-MSP. Again, full flights everywhere.
Weekend before was MSP-IAH-SLC-LAS-MSP. MSP-IAH, SLC-LAS and LAS-MSP were all full; IAH-SLC was maybe 90% full (maybe 3 open seats).
Now; my LHR trip in late January; both ATL-LHR and LHR-MSP were both maybe 50% full...

About 9 years ago, when AA still had the overnight nonstop from SJC-BOS, I paid $2000 (rather, my company paid) for a round trip on a flight that had less than 25 people in a 757.

DXB-BKK-DXB -> 100% going, 100% coming back (overbooked both ways, op ups on the way back, then stand-bys accommodated in Y).
DXB-DAM-DXB -> about 60% going, 85% coming back after the turnaround.

Last flight I flew FLL-DCA on NK full to the max.
I have only been on one flight from DCA down to MIA/FLL that was maybe 85% Full. Every time I fly between MIA/FLL and DCA the flight is just about 100%.

My most recent flights (connected through a major hub) commenced just 10 hours ago. Since the question is worded "how empty...?":
25 empty seats on my Saab 340 flight from origin city to hub city, about 50 empty seats on my connecting flight operated by a 757-200 -- which I suspect was effected by pax who missed their connections due to their inbound flights being cancelled or delayed due to weather in the eastern U.S.
My all-time most empty flight took place somewhere around late 1999 or early 2000 when I was one of two total pax on a Saab 340. Both of us boarded at the origin spoke city of the flight; no one boarded at the intermediate stop enroute to the hub city.

My last 2 flights BNE-SYD-BNE(734 and 763) were both 100% full however last year I flew on a 734 MEL-BNE with about 40 other pax.
Other empty flights I have had were 4 pax (including myself) on a Saab 340 BNE-LSY (Lismore, NSW) in 2007 and in 2004 I flew on a A330-300 SYD-BNE where Business was empty and Economy would have had about 50 passengers max.
