To be honest with you, its a hit or miss, I flew the Dutch Rust Bucket even from TPE-SFO last week. (well its the 744s that had been on the TPE-BKK-AMS route for ages) the one with the old seats and bluish purple arm rests along with cranes and storks engraving on the side panels. CI's oldest configuration in service. Well I think it consists of 3 744s dont remember the registration numbers, the rest are still main screen but with my favorite seat (with the fixed side head rests), then comes the new seats with PTV, which first were introduced on the 343.
I have flown the new PTV 744 from LAX-TPE with regular colors and a 777 overhead bin interior, I once did fly that same config on the CI Dreamliner from TPE-HKG-BKK at another time like 2 years ago.
I noticed that the CI 744s that have the new interiors and upgrades were GE powered 744
While the PW 744s I have been on were either the much older config and the last main screen config.
I would just book CI, cause its probably the best deal, and also the meals in economy are much larger and better than the economy class meals on BR and pretty comparible to the BR Elite meals as well plus you saved a lot more money on the airfare.
I take the night flight always from LAX, so I can just sleep, I dont need to deal with IFE.
same goes for the return too.
CI can get you out of BKK much later in the day than others, even with a BKK departure around 5pm.

All of the flights between LAX-TPE-LAX on the days you mentioned are currently scheduled to be operated by 744's in the new configuration which is equipped with the 777 style interior as Malaysia mentioned. There could always be a last minute equipment change for maintenance reasons, however, so there are no guarantees.

Flights to Hong Kong and Mainland China may see 74C operating, but it's a hit and miss.
Flights to Bangkok will almost always have AVOD except the one with AMS tagged (cause that's the only one with 744).
China Airlines currently only have 2 B747-400 configuration.
