I'd definitely say Etihad. I don't think that any of their fleet has middle seats in business and most of their planes have staggered seating so everyone has aisle access. Only Emirates' A380s have that.
Why do Aerospace Engineering students have to turn things in on time?

I'd choose EY as well. have only heard good things about the airline and their service on board. And specially, in business class no middle seats!
Unless you really want to fly the EK 380 off course. But then you have to fly on their 343 from Italy to DXB, where J-class is still sub-par to the rest of their fleet.

Italy-UAE...Etihad J class is any day better than EK but EY dont fly to Rome...only Milan!
UAE-SYD though it depends which aircraft of EK u fly on...but I would still give the edge to Etihad for UAE-SYD especially if u end up on their newly refurbished premium cabin on board the A 346s

I've flown Etihad J & F a number of times from Oz to Europe and the USA, will fly them again soon USA to Oz, I find them excellent, J is very very good and F is super, in my opinion they are better than Emirates.
They also have very competitive pricing.
