You should definitely go to the observation deck on top of Terminal E. A bus departs from Terminal 2 every 30 minutes or so. Here is a link to more info.
I have never done the sightseeing tour but it certainly sounds interesting. Departure is also from the little bus terminal at Terminal 2.

In case you are not heavily interested in aircraft (but then, why would you be active on this website ... ?!?) you also could take the train &head for downtown Zürich and have a stroll around - and maybe a short cruise on the lake.
Shopping is another option.
If you prefer to stay airside, (like in very inclement weather), there is a huge window to look out from Airside Center (opposite the shops); food outlets are located when heading into direction of B-gates.
Landside, but if not going onto a offical tour (observations desk or apron tour), you can stock up on supplies in two convenience stores and a proper supermarket located in the big building opposite the terminal building; head for "Parking" or "railway station". Atop the railway station you also will find a number of food outlets.
If time allows head for parking garage P6 located between the Radisson Blu hotel and Cargo center. From its upper levels one can spot descently and is a bit protected from the elements.
But above all, if time allows, go onto the guided apron tour which includes a stop at the famous runway cross. Be prepared to have CHF at hand for the tour. And bring your camera.

As suggested by HT, definitely consider the train service into central Zurich. A beautiful city on the Lake and perfectly suited for walking around. Many cafe's and restaurants for a quick bite and beverage before heading back to airport. You will have plenty of time for the city visit.
TG A346 taking off from 2:13min onwards was shot from Runway cross as was footage past 4:47; most other footage is from Observation Deck at E-gates (aka. Dock Midfield).
To lower expectations: The publically available tour only stops for 10 minutes or so at the runway cross. It has been the sole privilege of the Annual Meeting at ZRH to being able / allowed to spend an hour or more at the runway cross. If taking pictures from there, bring the SHORT lens. !
