What is, if any difference in say HKG-SIN, BKK-SIN, PVG-SIN, ICN-SIN, or HND-SIN?
Is it still the same amazing 5star service? If so any difference, changes, things I should know? I'l be in Asia for my birthday before heading to LHR for the Olympics with my brother who got my tickets to several events for our birthday.

Yes, Service is still the same as on par with Long-haul, however many of the intra-asia routes are flown by the ageing 777-200 / 777-200ER aircraft with the old PTV and seats

Differences you can encounter in economy class:
BKK-SIN - no menu will be handed out, 1 less course will be served. bread roll replaces appetizer though I think this will be reinstated soon. Aircraft type will most likely be the old 777-200 with blue and purple seats, 5" non-AVOD IFE.
Some HKG and PVG, all HND flights will have the refurbished 777 cabin with the gold and beige seats, larger 9" monitors running the old IFE system with a new user interface. These will have AVOD.

Some intra-Asia flights are flown by the old or refurbished 77Es as stated above, with some like CAN, KUL, HKG, NRT, KIX, NGO etc flown by the new A333s and destinations like HKG, PVG and PEK getting the 77W.

As others have mentioned it really depends as for example HKG is served by probably every aircraft in the fleet of SQ. So if you are flexible with your timing you can choose the aircraft type you want to fly. Service is the same and usually of the expected high standards, however there always are some Singapore Girls which are better than others.
If you fly in Business Class I would try to get on a newer plane as it makes a big difference due to the hard product being rather old on the non refurbished 777-200ER.
BTW, does anybody know when the refurb will be complete on the 777-200ER and 777-300?

SQ's 777's aren't all that old, the oldest frame (now with Scoot) was delivered in 1997.
BKK's 772s are fitted with the Ultimo recliner business class seats in a 2-3-2 layout. My personal favourite for sitting however these seats are heavily worn and do show signs of age and disrepair (often grubby). Meal service will feature a tray with the main course served together with the appetizer and dessert in small bowls. All the other sectors you have mentioned will feature the standard 3 course meal set up that you will have had in the past.
As mentioned above, HKG is served with the new regional business class (A330 and 772 refurbished, angle flat at 172 degrees) as well as the long haul product that you would've experienced on your previous flights with the airline (345, 77W, 388). The same goes for ICN as they have SQ16/15 to/from SFO. The refurbished 772/773s operate to HND and PVG as well.
