Just splurged and booked Z class (discount Biz) on AC from YYZ to SJO in a couple of weeks. I read after the fact that AC reserves the right to sub one of their 319s on the route that is configured in all Y.
Any idea as to what the chances of this happening are? Any way to track if we're going to get stuck on one ?

I can't say about likelihood, but I believe there are only (currently) 2 all-Y 319s in service. So I think it's a low probability, which has probably cursed you. If they sub an all-Y, I am certain you are entitled to a partial refund (i.e., the fare difference), which would probably come in the form of vouchers, not cash.

It is extremely unlikely that your 120 seat A319 would be subbed with one of the two 132 seat A319s.
Mostly because of the "reverse" problem. Namely that also means a 132 seat A319 was subbed with a 120 seat A319, displacing 12 passengers. And, as those 132 seat A319s normally fly to vacation type spots, there often are not a lot of options to accommodate those 12 passengers elsewhere.
I never say never ... as over the years, I have seen some odd thinking. So, if it did happen, I wouldn't ask for a voucher of the fare difference, I would ask for an upgrade voucher, round trip, from any Y fare, usable at the time of booking. Then .... visit Australia!

Appreciate the input.... normally I wouldn't sweat it, it's just that there was a very specific message on the AC website saying that SJO, Cuba, and 1 or 2 other vacation type destinations are subject to this switch.
Since noticing that I've been trolling through other sites figuring out how to match fin numbers (thanks TWLDR) to specific past flights.... so far, so good
