In your opinion who has the best product when flying from the States to Dublin? I'd prefer direct flights to Dublin with no connections in Europe. I prefer to fly Delta, but I'm concerned they won't have the 763ER mods completed by next September. So who would you take on this journey if you were me and preferred niceties such as AVOD?

EI. And even though they're not in an alliance, AFAIK you can earn UA miles on them. (at a 75% rate or something, not full, but better than nothing.)
Second the opinion that you should eat prior...Y food is pretty bad. But the seats are ok, got decent entertainment, and A330s beat 757s across the pond any day.

If you are flying DL from ATL, you'll be on an A332 during high season anyway, which may make your choice somewhat easier.
Regarding EI's Y food, I've found it fine, and it's actually more substantial departing the US than from Ireland.
But generally, I find EI the best option also.
