I'm in Montevideo quite a lot, as my Dad has just bought an estancia in Uruguay.
Normally, I fly MAN-MAD-MVD, but this route only seems to operate every other day. I sometimes have to fly via EZE to get back to MAD. All of these flights are with Iberia (no, they're not a bad airline!).
I've been across to Argentina for weekends, and I flew with Aerolineas Argentinas from MVD to AEP. Aeroparque is a nice little airport, not far from the city centre at all.
I have no experience with Pluna at all, apart from seeing the little ATR on the ground in MVD ready to go to Punta del Este (by the way, Punta del Este is quite nice).
Let me recommend Iberia to you. In my opinion, it's the easiest was to Buenos Aires or Montevideo direct from Madrid.

If you want to fly to South America,fly Aerolineas,Aerolineas Argentinas.I suggest BUE from MAD or FCO as your main gate than 2.15 minutes west to SCL and 45 minutes east to MVD and a big choice of flights to both destinations

Wow ! You really want to go one month there during winter in the south hemisphere ? For me and if money is not the problem for you, try LAN from MAD to SCL, I would be very curious to read a trip report of that leg (but oh well, that's only for my taste). There is also TAM from CDG-GRU-SCL.
