Many airports are really fixing up their concourse facades but I find everything to be so expensive that I usually avoid just about everything except 'Chick-fil-a' or an occasional candy bar & magazine.

Terminal C at EWR is the most impressive I've been in. It has a huge selection of unique shops and places to eat, courtesy of CO contracting with Westfield, the same company that owns many malls across the US and around the world. Another great advantage is that they promise "street pricing"; in other words, the stores aren't allowed to charge more simply because they're in the airport.
The food in Chicago O'hare is beutifull, There is a great selection, not just choice of actual food stuffs but the different cultures of food in the airport, for example, chinese, indian, italian etc. My fav there was the Sweet & Sour chicken, beef in black bean sauce and egg fried rice
