I am considering going on a LCC flight what destinations in Europe that served from STN do you think are worth visiting for a day of spotting?

AMS !

EZY has daily STN-AMS flights. I just randomly selected a date in August and your price will be:
STN-AMS 07.10-09.15
AMS-STN 17.05-17.10 £71,98

If you would like to spend some time in Amsterdam (just a 20 minute train ride from the airport), you can also select the evening flight to STN. Departure from AMS 21.50, arriving STN 21.55. Total price will be £56,98.

You can also fly with HV to RTM and go from there by bus to AMS, but that's a bit of a hassle.

(shorter stays also possible)

2 spotting locations: Visitors terrace plus another one at the end of the runway (part or the mainline railway station).
