"Drawing the subject back to the NZ A320s - I have been looking through the schedules as on Air New Zealand's website for the 26th of October. Provided that all flights are A320s on that day, as the schedules say, NZ will have 3 A320s running as follows:

When will the B767-200s be phased out? also will the B737-300s be phased out too?

The 767-200s should be gone by the end of the year, though this is liable to change, especially given that ZK-NBC still appears to be sitting in the hangar at BNE after the engine incident late last year.
The 737-300s will be phased out over time. The A320s are at first only intended for use on the international routes. There are 5 737-300s that operate international routes (though sometimes they get used domestically, and some domestic ones get used internationally). The last time I checked, these 5 aircraft were ZK-NGA to ZK-NGE, though this may have changed. Obviously, the international 737-300s will be the first to go. I suspect a couple may go this year, but then I don't think any more will go for a couple of years yet. Presumably the A320 will eventually replace the 737-300 on domestic routes, but this would probably be about 5 years away. And don't forget that Freedom still have their 737-300s, with no indication they will move to the A320 (of course, in 5 years time, Freedom may well be part of VirginBlue, if that is one of the concessions for the QF deal...)
Anyway, perhaps our resident Air New Zealand employee may be able to shed some more light, or confirm some of what I have said.
Oh, just to correct the original poster, the first flights will be on the 26th of October (a Sunday), on the timetable given in the post above (which was actually mine from the YSSY board - thanks Zizou!)
