This is the kind of information that is not easy to find, so I'm launching my bottle in the sea of your knowledge (I know, there's a poet sleeping in me ). From what I've been able to find, here's a few airports that seem to be open 24/24 (in no particular order):
- YMX (yessssss!!!);
- and probably lots more.
Please tell me of all the airports you know that are open 24/24. Thanks.
Never let the facts get in the way of a good theory.

For Germany, most major airports are open at night for:
-measurement and calibration flights
-flights required to prolong / issue a licence
"Normal operations" are allowed: (note most are quite small airfields)
HHN is open round the clock for Chapter 3 aircraft.
LEJ is open round the clock for Chapter 2 (permission required) one one runway, and for Chapter 3 aircraft.
CGN is open round the clock for Chapter 3 aircraft (bonus list), and military flights
DRS is open for Chapter 3 / bonus list aircraft
LBC is unrestricted (5900ft runway, but the B747-400 is on the bonus list)
FMO is open for Chapter 3 / bonus list
FNB is unrestricted (preferential runway is 9/27, the only runway, ha ha)
I feel in no mood looking up about a thousand other airports that come to my mind, but in the third world, most airports are completely unrestricted, anything that is in the air and wishes to land may do so ...

MIA is open 24/7.
The last passenger departures are at around 1AM (there are one or two arrivals around that time too) and the first passenger arrivals are just before 4AM. Of course, cargo is going on all day and night long.

DTW has a policy between 12:30a and 5a for incoming and outbound flights. If the weather is clear and the wind is calm- all flights depart to and arrive from the south- that is because south of the airport is mainly rural, while north of the airport is built up with a lot of houses.
: In the US it is an exception to things to not be open 24 hours per day. You could probably list those that aren't using your fingers and toes to count
: KLAS, as well as every casinos, is open 24/7
: DEN is open 24/7. CAI is open 24/7. It sees most of its traffic at night.
