Why Planes Are Delivered Months After 1st Flight?

We can often see pics of aircrafts ready to be delivered, with their airlines liveries, but the first pic of the same airliner flying for the airline often comes after 1 month or 2.

Why Airbus and Boeing wait all this time to deliver planes to their customers?

Various certification flights, I suppose? I mean, all sorts of systems etc. has to be tested in air, to ensure that thy're working as predicted.

I remember when AirTran had Ship 761 delivered on 5/23/02, the put it into service 2 days later. On May 26, 2002, it was taken out of service due to APU problems, and was placed back into service on June 10, 2002.

Why didn't Boeing catch this before delivery during their usual "Test Flights"?
