in two days I'll fly to Barcelona from Amsterdam Schiphol, how's Iberia's inflight service at the moment? Anyone experienced Iberia lately on a standard European route?

In European flights IB inflight service is satisfactory. Free newspapers, meals not bad, wine or beer included, etc.
However, IB just announced that from 2004 on, no free meals will be served in Economy class. There will be a choice of menus, but the customer will have to pay. I am not sure this is a right move, probably it is not a big nuisance for the shorter flights (Spain to France, UK or Italy), but for example MAD to ARN takes about 4 hours, too much time for not being fed. I do not think it is a good move to make IB like a no-frills airline, if I have to fly across the continent next year I will try to use the competition (JK, LH, BA, AF, AZ, etc) that at least feeds me.

Osteogenesis,
AMS-FRA???? That cannot be on IB...
As for the MAD-MEX flight, F/A's in IB intercontinental flights are usually the most senior ones in the airline, and they usually give a less than friendly service. But European flights are different, younger and more motivated people are there .

Their A320 are very comfortable, with IFE. The food is OK...it's "airline food" like all other airlines... not better, but not worse. The F/A are sometimes not very friendly or "smiling"... they serve you food and just disappear until landing...

I have flown several times on IB between FRA - MAD - FRA and DUS - MAD - AGP. So actually to say the food was not that worse the only thing I would complain about is everytime it was like frozen.

I have flown IB a lot and all the times I have found them to be very good - although I have only experienced 1 bad F/A - they we're all young and good looking and helpful. And there aircraft are very comftable, nice seats, good pitch also good IFE. Have a great flight with IB.
