There's almost no service from JFK to Chicago, Dallas, Toronto, Detroit, Cleveland, Denver, Houston, Minneapolis, when I say almost no service I mean less than three daily flights.
As long as Laguardia airport is operational JFK will never reach it's full potential, Jetblue has changed JFK tremendously with regards to domestic service. However Jetblue's success only hurts other carriers like AA, DL from ever establishing domestic service from JFK of any substance.

I used to fly ORD-JFK on United DC8s, there were 2 dailies in the 80s, always full too. TWA flew that route using 707s then later 727-200s. Then Pan Am flew an L1011-500 daily to connect to trans Atlantic flights. That was a very nice flight too. I preferred JFK to LGA actually and hope that JetBlue will come in to ORD before too much longer.

I think there is a market for JFK service to ORD, 4-5 flights per day should work well. NYC-CHI is such a large market, that there has to be a decent amount of people who live closer to JFK, that would welcome this service. Also, though ORD does have many international flights, it still does not have another near the number of flights/destinations JFK has. Thus, you have many opportunities for connecting services.
