Go with Cessna 152's for primary training, they are easy as anything to fly and cheap. Eventually you'll have to move up, but they worked great for me. I don't know too much about the process in South Africa, but in the US you attain your Private Pilots License, and after that the common trend is Instrument rating, Commercial License, and so on. Try http://www.beapilot.com and search for local flight schools, although I'm not sure if that is an international website.

Go around to the airports in your area and get to know what there is available. Talk with instructors, look around, etc. Make sure you like the school, that you feel comfortable there, that it is not too far away from home, those type of things... The instructor you choose is much more important than the plane you choose to fly in. Cessna 152s/172s, Piper PA-28s, and whatever else...they're all good airplanes. Once you've picked out a school and an instructor, you'll most likely go up for some kind of introductory flight to show you what its like to fly a small plane and train in them. After that, if you decide its for you, you'll sign up for further lessons and be well on your way to being a certified pilot!

is there an extra rating for things like the baron or the chieftain, and is it a load of sense to train on a twin, or is training on a twin simply not offered, or what is actually going on with training?
how is a ppl including ifr, but no commercial stuff in the US approx?
