Hello,
I was just curious, if someone could explain all of the different class labels (A,B,C,...). They are mentioned everywhere in these threads, and I am not very familiar with them. Thanks!

There is an official list of classes as recommended by IATA, and they are more or less in use by most airlines (although many carriers have different uses for Domestic and Internationals services) - the official list is.

First Class Category
P First Class Premium
F First Class
A First Class Discounted

Business Class Category
J Business Class Premium
C Business Class
D Business Class Discounted
I Business Class Discounted
Z Business Class Discounted

Economy / Coach Class Category
W Economy Premium
S Economy
Y Economy
B Economy Discounted
H Economy Discounted
K Economy Discounted
