I know that this observation deck has been closed for some time now due to security reasons, but there is also a really great pilot shop/gift shop there as well. I am leaving London on Thursday and wanted to know if this gift shop still exists and if so, is it in the same place and also what are the business hours?

Yes the deck is still closed, and will most probably stay closed due to 'securtiy risks'
The shop is closed as it was actually situated onto of the viewing area. I think, although forgive me if im wrong, the owner has a secnod shop in one of the hotels. Im not sure which one it is, but its not the Renaissance.

Indeed the gift shop in the Visitors' Centre is a branch of Mach III - they also have a branch in Hillingdon, northwest London and well away from the airport. To get to the Visitors' Centre, take one of the free buses from any of the terminals headed to the north of the airport and ask the driver for the stop. Once there you will see the Sheraton Skyline hotel nearby where the rival model shop - which has a truly massive range of models - is located.
The spectators' gallery is closed - possibly forever as even the signs leading to it are blocked out now.
