Except the A-318 and A-380 which carriers have operated every single airbus.

Are you including predecessor airlines (from mergers)? If so:

Wardair operated A300s and A310s
Canadian picked up Wardair and the A310s but not the A300s.
Air Canada picked up Canadian, which also operated the A320.
Air Canada operates the A319, A320, A321, A330 and A340.

So you could say that Air Canada or its predecessors operated every main Airbus type.

I'm not including variants in the analysis.
