Since this will no doubt catch the eye of some AMS Spotters, how would one get to the areas from the terminal...Since I'm a Airline Employee I am required to clear customs on my connections, I just thought I"d ask, I might head over next week...
as for the original question, I dont remember ANY spotting areas at airports in the US even before 9/11....ISP had a nice view of the ramp from the restaurant on the second floor, and at JFK T3 the food court (aka "Windows on the Ramp") had a good view....thats all I can remember off the top of my head...

This is a misunderstanding of AMS.
As far as i know there is only one official spotting place by which i mean a really dedicated area.
All the other places along side the various runways are more or less taken by the public.

The spotting area that is marked is on the far side of the airport, towards Hoopdorf, but is a marked exit off the highway

There are 3 official spots. The observation platform, the MacDonalds spot on 09/27 and the spot at the aalsmeerderweg on 06/24. All these places can be found on the official Schiphol website. The MacDonalds spot even has directions on the local roads leading up to it.
Next to those there are loads of unofficial, but completley legal, places. Plesae visit my site for directions:
